To cold-brew, simply place overnight in a one- quart pitcher of water. Awake to find a tea rich in flavor and aroma. For quicker preparation, steep in hot water for three to five minutes and add ice.

Cream or tea first in the cup? When Chinese porcelain was shipped along with tea to Great Britain, it was considered too delicate to pour hot tea into cups directly, so the Brits put milk in the cups first, then poured on the boiling hot tea, cooling it slightly to (they thought) avoid cracks. When Brits founded their own porcelain companies (Staffordshire, Wedgewood, Blue Willow,) they learned firing the clay gives porcelain cups strength enough to hold hot liquids safely.
