Tea pearls are named to indicate their shape, tightly hand-shaped balls of 3.5-4 grams of baicha or white tea. Like all Chinese white teas, this is grown in Fujian where the fertile fields provide the country with one-fifth of its total tea production and white teas their signature taste and aroma. Minimal processing retains the exquisitely mild flavor, and offers a light golden liquor in the cup.
