Ginseng is a root crop in the Panax genus with three cultivated varieties: Korean ginseng, South China ginseng, and American ginseng. Wild ginseng varieties also exist but are much rarer and in some regions are nearly extinct due to overharvesting. When sold, ginseng comes in three varieties: green or fresh ginseng; white ginseng, which has been peeled and dried; and red ginseng, which has been peeled, heated, and dried.
