Vanilla pods are the fruit of vanilla orchids. Before they can be used, however, they must first go through an extensive four-step curing process. The four steps are killing, which stops vegetative growth; sweating, which helps bring out the vanilla’s aroma and flavor; drying, which prevents rot and seals aroma; and conditioning, which matures the aroma. Pods are then graded according to length, physical quality, and moisture content.
