However tempting it is to consider scotch as an ingredient in butterscotch, "scotch" is a variation of scorched, which is what happens when heating brown sugar to a very high temperature. The molasses in brown sugar provides butterscotch with more complex flavor than caramels which use white granulated sugar. Creamy sweet butter creates the smooth texture.
